Raw Cauliflower Tabouli

A couple of years ago I took a training for the Fresh Start Cleanse program, which was started by Nedra Sahr. Nedra is a nutritionist and has been with Shaklee for over 20 years. It’s a wonderful program that I have done twice and am starting again this week to help with the holiday indulgences! So many people have done Fresh start with great results! – weight loss, inches loss, energy gained and it helps to change your mindset around food!

One of my favorite Fresh Start recipes is the Raw Cauliflower Tabouli. It gives you a lot of cauliflower which is a sulfur veggie. If you’re not familiar, sulfur foods can help ward off things like cancer. Onions are another sulfur food, and there are green onions in this recipe too! I also add garlic, another sulfur, because it adds great flavor and is so good for you!

This is a delicious and healthy recipe I like to make and keep in the refrigerator to munch on. My kids like it too!

Raw Cauliflower Tabouli


Ingredients

  • 1/2 large head of cauliflower
  • 8 cherry tomatoes cut in half
  • 1 bunch green onions chopped
  • 1 english cucumber chopped
  • 1/8 cup mint leaves chopped
  • 1/3 cup extra virgin olive oil
  • 3 TBSP fresh lemon juice
  • salt and pepper
  • 1 TBSP fresh minced garlic

Instructions

  1. — Place cauliflower florets in food processor with S blade

    — Pulse until consistency of couscous

    — Put in a large bowl

    — Add other ingredients

    — Make dressing…tweak

    — Add more mint and lemon juice at will.
