Who doesn&#8217;t love these, right? My kids ate them up. I was happy because my secret ingredient was&#8230;&#8230;BROCCOLI! (could also use spinach, sweet potato or beet)<\/p>\n<div style=\"clear: both; text-align: center;\"><a href=\"http:\/\/1.bp.blogspot.com\/-HctZ114Ow2A\/Ty9CB-fFcbI\/AAAAAAAAFb0\/Vi2TUm75A40\/s1600\/broccoli.jpg\" style=\"margin-left: 1em; margin-right: 1em;\"><img decoding=\"async\" border=\"0\" src=\"http:\/\/1.bp.blogspot.com\/-HctZ114Ow2A\/Ty9CB-fFcbI\/AAAAAAAAFb0\/Vi2TUm75A40\/s1600\/broccoli.jpg\" \/><\/a><\/div>\n<p>If I didn&#8217;t make them myself, I wouldn&#8217;t have been able to tell it was in there. They were SO good! <\/p>\n<div style=\"text-align: center;\">They were super easy to make.&nbsp;<\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\">First, I mixed bread crumbs, Flax seed meal, garlic salt, and paprika in a bowl. (also called for grated parmesan and onion powder. I was out of onion powder and we are pretty much dairy free here because of my kids, so didn&#8217;t have that either but didn&#8217;t seem to miss it!)<\/div>\n<div style=\"clear: both; text-align: center;\"><a href=\"http:\/\/2.bp.blogspot.com\/-NXY_zJb9Gv0\/Ty9F525HvDI\/AAAAAAAAFck\/LR-ex_3W7gs\/s1600\/IMG_7794.JPG\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"320\" src=\"http:\/\/2.bp.blogspot.com\/-NXY_zJb9Gv0\/Ty9F525HvDI\/AAAAAAAAFck\/LR-ex_3W7gs\/s320\/IMG_7794.JPG\" width=\"240\" \/><\/a><\/div>\n<div style=\"text-align: center;\">&nbsp;(flaxseed is an excellent source of fiber and omega 3s and it is SO easy to add to many things like soups, breads, pancakes, etc)<\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\">Then I ground up one cup of broccoli in a little food processor that I use for chopping and pureeing foods. You could use anything to chop it up in fine pieces. I mixed that with one lightly beaten egg in a bowl.<\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\">I cut up my chicken (I used tenderloins but you could use anything) into small nugget size pieces.<\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\">Dipped the chicken in the egg mixture <\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\">Then I covered it in the bread crumb mix<\/div>\n<div style=\"clear: both; text-align: center;\"><a href=\"http:\/\/4.bp.blogspot.com\/-HAVK3gBhrXM\/Ty9EHeiJZSI\/AAAAAAAAFb8\/tkKhw_b_4Ts\/s1600\/IMG_7791.JPG\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"240\" src=\"http:\/\/4.bp.blogspot.com\/-HAVK3gBhrXM\/Ty9EHeiJZSI\/AAAAAAAAFb8\/tkKhw_b_4Ts\/s320\/IMG_7791.JPG\" width=\"320\" \/><\/a><\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\">Added it to a pan with a little extra virgin olive oil that was heated.<\/div>\n<div style=\"clear: both; text-align: center;\"><a href=\"http:\/\/2.bp.blogspot.com\/-87m-gg3OwHA\/Ty9EbH9Z6uI\/AAAAAAAAFcE\/KsxVXY-3-Bg\/s1600\/IMG_7792.JPG\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"240\" src=\"http:\/\/2.bp.blogspot.com\/-87m-gg3OwHA\/Ty9EbH9Z6uI\/AAAAAAAAFcE\/KsxVXY-3-Bg\/s320\/IMG_7792.JPG\" width=\"320\" \/><\/a><\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\">and cooked it approximately 5 minutes on one side and then 5-10 minutes on the other until it was cooked through. It&#8217;s good for boosting the immune system and fighting infection.<\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\">I also made mashed potatoes with cauliflower. Have you ever made this? I do all the time. I didn&#8217;t really follow the recipe in the book. I just boiled some cut up potatoes and when they were getting close to being done I added some cut up cauliflower to boil with it.&nbsp;<\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"clear: both; text-align: center;\"><a href=\"http:\/\/4.bp.blogspot.com\/-tvt3qRhYqc8\/Ty9HVOUonaI\/AAAAAAAAFcs\/-Mt49aHI6Js\/s1600\/cauliflower1.jpg\" style=\"margin-left: 1em; margin-right: 1em;\"><img decoding=\"async\" border=\"0\" src=\"http:\/\/4.bp.blogspot.com\/-tvt3qRhYqc8\/Ty9HVOUonaI\/AAAAAAAAFcs\/-Mt49aHI6Js\/s1600\/cauliflower1.jpg\" \/><\/a><\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\">I drained the potatoes and cauliflower and then mashed it all after I added some smart balance spread, a little garlic salt and chicken broth! I don&#8217;t use milk on my mashed potatoes because my kids are sensitive to it. You can&#8217;t tell that it is missing. \ud83d\ude42<\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\">So that does it for another sneaky recipe idea.
